A popular seafood ramen shop. the soup is free of animal products and additives, made with a base of dashi stock extracted from dried sardines from the seto inland sea, blended with the umami of domestically grown ma kombu and shiitake mushrooms. the noodles are homemade, using 100% nagano prefecture-grown "chikuma no megumi" wheat. the clear soup, packed with umami, and the chewy, springy noodles are a perfect match. in addition to the signature "special chinese noodles with soy sauce," the "kakesoba rice set," available only at lunchtime, is also recommended.
