This handmade soba restaurant uses 100% high-quality buckwheat flour from echizen ono, fukui prefecture, and natural water from the famous "wakasa uriwari" spring water. the buckwheat flour is ground at a slow speed with a stone mill, giving it a particularly fragrant and subtle sweetness. in addition to the classic "zaru soba," which allows you to experience the flavor of the soba directly, we also recommend the "sesame sauce zaru soba," which is enjoyed with a rich homemade sesame sauce. you can enjoy the unexpected combination of the double aroma of sesame and soba. be sure to try the wide variety of seiro rice that comes with the set.
