Sanshoya honke
"kobore ume" from a long-established tsukudani shop in a corner of a tsukudani shop founded in 1926, we discovered a sign that read "kobore ume." its true identity is the lees left over from making mirin (sweet rice wine). with its white, crumbly appearance, texture and sweetness similar to white bean paste, and a unique alcoholic flavor, it is said to have been a popular snack for children during wartime. with fewer and fewer sake breweries producing mirin, it has become quite rare these days, so take this opportunity to get your hands on some.
