Kyoto's local tofu, kuza-ya
Founded in 1982, the company has its main store in nishikyogoku and operates three stores (two tofu shops and one confectionery shop) mainly in ukyo ward. seeking the rich flavor of local soybeans and the pure spring water of mt. atago, they contract with farmers throughout japan who are working to cultivate heirloom soybean varieties, obtaining only the finest soybeans. nothing is added or removed from the manufacturing process. the company makes tofu that maximizes the deliciousness of the ingredients, using the experience and intuition of kyoto tofu artisans. representative kazuhisa higashida received the "outstanding skilled worker (contemporary master craftsman)" award in 2024 from the minister of health, labour and welfare.
